Jim
Garraway, a native of Barrie, has returned from the west
coast bearing culinary gems for us to feast on. Jim
sought out new and wonderful experiences, traveling
first to the Canadian Rockies, then landing at world
renowned Château Whistler to begin his culinary training
under master chef Bernard Casavant taking him on as his
apprentice.
Upon meeting, then executive sous-chef,
Rodney Butters at Château Whistler the two formed a
unique and magnificent bond in the kitchen. This led the
two to Vancouver Island to open the kitchen at a
beautiful resort called The Wickaninnish Inn on the
outskirts of Tofino. Garraway ended his stay in Tofino
as the chef de cuisine. He returned to Barrie in late
2002 to raise his young family amongst the growing
Garraway clan.
In the spring of 2003 Jim & his wife Sophie opened
Garraway’s Bistro. In the fall of 2004 they had the good
fortune of acquiring additional space on the corner of
Dunlop St. and Maple Ave. increasing the seating
capacity yet still attaining the intimate dining
experience that Garraway’s Bistro has become known for.
Committed to his
roots Jim believes in using the best ingredients available and
buys as much local product as possible. Mixed Greens, organic
sprouts and vegetables from places like Cookstown Greens,
Cancilla’s Fruit Market, honey from a near by bee keeper.
The
menu’s at Garraway’s are forever changing. Jim likes to use
fresh seasonal produce and fish and enjoys keeping things
interesting by catching the waves in trends and occasionally
setting trends of his own.
From the moment that you enter his intimate room you will be
entranced by the simplistic yet elegant table settings,
graciously served by his wait staff and by the time you leave,
counting the days until you can come back again. |
